- Prepare 1 ready rolled puff pastry
- Get 1 tin caramel
- Get 3 TBSP Icing sugar

The most popular ones are Argentinian and Peruvian, and they can be covered in powdered sugar, grated coconut or chocolate. These melt-in-your-mouth, soft and buttery shortbread cookies filled with dulce de leche, known as Alfajores, are a popular dessert throughout Latin America. Dulce de leche is probably my favorite part about these cookies.
Instructions to make Lazy alfajores:
- Open the ready rolled pastry straight out of the fridge with a rolling pin, once you have unrolled it. This is just to minimise the creases. Line a baking tray with parchment paper.
- Use a round cutter to make the bases. The size is up to you. Cut and transfer straight away to the baking tray, otherwise they will start to stick together. Cut them close to each other to maximize the pastry.
- Bake at 200 degrees Celsius for around 10 minutes, until they are golden brown. Once ready, let them cool down.
- With the help of a knife, open the shells. To make sure they won't break, slightly press on the sides while holding it, you will see a natural cut formed, there is where you should introduce the knife. Don't open all the way, just enough to fit the pipping bag.
- Use a small pipping bag, put the caramel sauce in the bag and cut a small hole. Fill the bottom of shells but don't overflow it. Dust them with the icing sugar and they are ready!! Enjoy!
