  3. Knead on a floured surface for a few minutes and roll out. Use cutters to cut out gingerbread into people, or rounds if preferred. If you do not gave acute use a template and cut around with a knife. Reform dough and re-roll to use up all of the dough.
  4. Bake for 10 minutes or until golden and lightly firm. They will firm up further when cooled.
  5. Cool or wire rack then decorate with icing, sweets or raisins, or eat them as they are.
