Combine all the ingredients, except the chicken, in a food processor. Process it until the consistency of a paste. Transfer the marinade to a resealable plastic bag and add the chicken, tossing it around so it gets coated with the marinade. Seal the bag and marinate the chicken in the fridge overnight.

Steps to make Tamarind marinade:
  1. Combine tamarind and lime peels in a saucepan and bring to simmer cook for 5 minutes.
  2. Remove from heat cool to room temperature and stir in other ingredients.
  3. Add to what you wish to cook it with. Usually good to put into a bowl or ziploc bag for at least an hour.

Transfer the marinade to a resealable plastic bag and add the chicken, tossing it around so it gets coated with the marinade. Seal the bag and marinate the chicken in the fridge overnight. In a mortar and pestle, pound the ginger and chile pepper into a paste. Add the toasted coriander and brown mustard seeds and the salt and continue to pound/mash until fully incorporated. Rub all over your meat of choice, and allow to marinate for at least two and up to six hours.
