Heat another cast iron skillet, add a little olive oil (don't get the pan too hot, smoking olive oil is not good for you!) and quickly cook the chicken chunks. When the chicken is almost cooked through, add the peppers and onions and a little minced garlic. I was out of fresh so I used dried, about half a teaspoon. Place chicken fillets in baking dish.

Instructions to make Pepper Chicken Fillet:
  1. Add oil in wok/pan. Add garlic and ginger. Deep Fry. Keep aside
  2. Add fillets into pan. Keep stirring. Cook for 5 minutes. Add capsicum, tomato. Stir and mix. Cook under min flame for 3 minutes.
  3. Add soy sauce, pepper powder. Stir and mix well. (Add salt id needed) cook for 3 to 5 minutes. Add spring onion, fried garlic and ginger. Stir and mix. Serve hot with rice.

I was out of fresh so I used dried, about half a teaspoon. Place chicken fillets in baking dish. Sprinkle top and bottom with seasoning salt and black pepper, to your own taste. The fillets can be flavored in dozens of ways and stored in bulk in the freezer. Baking fillets rather than pan frying helps reduce the amount of oil needed to properly cook the meat.
