The ingredients needed to make Dry fruit Biscotti:
  1. Take 1 and 1/4 cup all-purpose flour
  2. Take 1stick (120gm) unsalted butter
  3. Take 3/4 cup granulated sugar
  4. Prepare 2 eggs
  5. Make ready 1/2 cup mixed dehydrated fruits
  6. Make ready 3 tbsp black raisins
  7. Make ready 1/4 cup mixed roasted nuts
  8. Prepare 1 and 1/2 tsp baking powder
  9. Prepare 1/2 tsp freshly grated orange zest
  10. Get 1 pinch salt

Blend in eggs and anise extract. Sift together the flour, baking powder, and salt; stir into the egg mixture. Finally, stir in the candied fruit. Sift the flour with salt and baking powder and place aside.

Steps to make Dry fruit Biscotti:
  1. Chop roasted nuts (walnuts, almonds, cashews), dehydrated fruits (mango, papaya, kiwi) and black raisins in small size pieces.
  2. In a big mixing bowl, add soft butter and granulated sugar.
  3. Blend It with a hand mixer until creamy and fluffy.
  4. Add 2 eggs and mix again. Don't over mix, mix until eggs mix well, incorporated to the mixture.
  5. Add in freshly grated orange zest and a pinch of salt. You can also use vanilla essence or other flavour to the mixture.
  6. Sieve together all-purpose flour and baking powder. Fold to the wet mixture.
  7. Also fold in prepared nuts and fruits.
  8. Preheat oven for 10 mins at 180 degree C.
  9. Spoon the mixture in a lined baking tray to make 2 to 3" width log.
  10. With a spatula (dust some flour on the spatula) smooth the sides and top.
  11. Bake them for about 25 minutes or until top becomes golden brown. You can bake them in a cake pan also. Be sure that the thickness of the mixture is less(approx 2").
  12. Let it cool for about 30 mins.
  13. When the cakes become cool, cut into thin pieces (1-2" thickness).
  14. Spread the pieces in the baking tray.
  15. Bake them again at 130 degree C for about 15 mins or until golden brown. Note that for 2nd time baking, no need to preheat the oven.
  16. Leave the biscottis in the tray to cool down completely. At first they may little soft to touch. But after cooling they will be crisp.
  17. Store them in air tight container and enjoy anytime with a cup of tea or coffee.

Finally, stir in the candied fruit. Sift the flour with salt and baking powder and place aside. Stir in the eggs, one by one, then add the orange zest and vanilla and mix well. Using a spatula, fold in the flour then add the dried fruits and almonds. This is my fav biscotti recipe.
