- Prepare the ingredients for the filling: chop the sun-dried tomatoes and cut the cucumber into matchsticks.
- Slightly warm the tortillas to make them more soft and easier to roll. You can do it in a microwave (for 10 seconds each).
- Spread a quarter of the hummus on the first tortilla. Form a vertical line of cucumber matchsticks in the center, then next to it a second one made of baby spinach. Sprinkle a quarter of the chopped sun-dried tomatoes over the entire tortilla.
- Lift the lower portion of the tortilla and firmly roll it towards the top to create a pinwheel shape. Cut into strips with a sharp knife. Place on the serving plate, then repeat with the remaining three tortillas.
I like to use a combination of feta and parmesan cheese because you get the most delicious flavour. You could of course just use one type of cheese, or even cheddar cheese, but this combination really is my fave. Before baking the spinach & feta pinwheels, brush over a little bit of lightly whisked egg and sprinkle with sesame. Sieve the flour into the baking bowl, rub in the margarine until it resembles bread crumbs. Make a well in the centre of the mixture and add the milk a little at a time, until it forms a soft dough.
