This recipe was originally given to me by my mother's friend after I had lots of mincemeat left at Christmas and was sick of mince pies.

- Take 115 grams butter
- Get 115 grams caster sugar (regular white sugar)

- Prepare 200 grams self raising flour
- Take 1 dash milk
Meanwhile, mix the topping ingredients together in a bowl. All my cakes are made from scratch and baked fresh just before your wedding day. The day before making the cake, place the sultanas, raisins, currants, ginger, orange zest, golden syrup and sherry in a bowl, stir well, cover with clingfilm and leave overnight. Remove layers from pans, and cool completely.
Steps to make Fiona's mincemeat cake:
- Grease a 7inch round cake tin
- Cream butter and sugar together (ie beat together until it looks light)
- Beat in eggs to the sugar and butter mix. Beat in one at a time until combined
- Stir in the mincemeat and fold in the flour. The mixture should be moist and not too stiff add a little milk if necessary
- Bake at 325°F for 10 minutes then lower to 300°F for 30-40 minutes the cake is ready when it shrinks from the sides of the pan
- Make a coffee sit with your feet up and enjoy a slice :-)
The day before making the cake, place the sultanas, raisins, currants, ginger, orange zest, golden syrup and sherry in a bowl, stir well, cover with clingfilm and leave overnight. Remove layers from pans, and cool completely. Beat eggs slightly in large bowl. Stir in mincemeat, candied fruit, condensed milk and pecans. The texture of a mincemeat cake is pretty similar to a Scottish Dundee cake - less rich than my Amaretto fruit cake, this is a light, crumbly fruit cake.
