- Combine all ingredients.
- Season with low-sodium soy sauce or red sauce or any sauce of your choice on your own serving.
- Enjoy!
It can be made up to two days ahead. Refrigerate covered and then reheat just before serving. While rice is cooking, clean mushrooms with a damp paper towel. Break off the stems and cut the caps in quarters. Haven't tried to sub the soy milk for almond or rice milk yet, but I can't see why it wouldn't work.
