- Stir in the oats,desiccated (shredded) coconut and glace' (candied) cherries and mix until evenly combined.
- Spread the mixture on to the baking tray (cookie sheet) and press down with the back of a palette knife (spatula) to make a smooth surface.
- Bake in a preheated oven,170oC/325oF/Gas Mark 3,for about 30 minutes.
- Remove from the oven and leave to cool on the baking tray (cookie sheet) for 10 minutes.
- Cut the mixture into squares using a sharp knife.
- Carefully transfer the flapjacks to a wire rack and leave to cool completely.

A sprinkle of allspice, a little syrup, a little butter, or maybe some jam, and these Coconut Milk Flapjacks make for a sunny start to the morning. Add the dried mixed fruit and stir again, put to one side while you prepare the rest of the ingredients Place the margarine, syrup and sugar in a saucepan over a medium heat, once the mixture starts to melt give it a stir. Remove from the heat and pour in the porridge oats, salt and desiccated coconut, if using.
