This was pretty much as Toad in the Hole should be although I found the batter a little on the heavy side and not as light and fluffy as my mum's TitH. Maybe I will use a little less flour next time. Also I'm finding it really hard to find good sausages in the US. Even the 'English style' bangers from my British food store in Dayton OH are not.

Instructions to make Sig's Toad in the Hole:
  1. Preheat the oven. Add two tablespoons of vegetable oil into your ovenproof baking dish, brush around the dish. When oven is hot put your baking dish into the oven, heat the oil in baking dish.
  2. Mix milk, eggs, salt and flour in bowl with a whisk. Melt butter, set aside. Chop mushrooms and leeks. With a little oil, fry them until they soften. In aother pan fry sausages, until they just start to brown. Do not overcook them as they will brown more in the oven. Mix melted butter and the 2 mustards into batter, add the herbs. Whisk again.
  3. Remove the baking dish from the oven, pour the batter into the dish. Then add the mushroom and leek mixture. Top with the sausages.Serve with baked beans or a salad

Also I'm finding it really hard to find good sausages in the US. Even the 'English style' bangers from my British food store in Dayton OH are not. No fail, not heavy podge but yummy wonder A perfect toad in the hole. for me this means brown yummy sausages (or left over beef/pork/lamb), a light custary yorkshire pudding, crispy on the edges and risen and fluffy inside. Many use onion gravy but i am a little bit of a heathen here.with this recipe i can enjoy all of it without needing lashings of. For me there is no other food that says "Great English Dishes", than Toad In The Hole served with mash potato and a lovely rich onion gravy.
