I have made diabetic friendly cookie using same flours and same method. Add whole grain wheat flour, and ground oatmeal. Add ground barley and ground flax. Fold in old fashioned oats and raisins.

Instructions to make Multi grain cookies:
  1. Take ghee in large mixing bowl
  2. Add powdered sugar in it and mix it
  3. Whisk it for 10-15 minutes. Till mixture turns light and fluffy.
  4. Now cook add all the flours in it. Mix it well and make a dough.
  5. Add oats in mixture and mix it. Cover it and put it for rest minimum 20-25 minutes.
  6. Take one kadhai or pressure cooker and remove it's ring and whistle. Add salt in it.
  7. Heat it for 10 minutes on medium to high flame
  8. Grease the plate.
  9. Make small balls of dough and dot in middle with coffee.
  10. Set it in baking tray.. Keep little distance between them. Cover it and cook it on low flame for 20-25 minutes.
  11. Remove tray from cooker after 25 minutes. Let it cool. Separate it. Delicious in taste and very simple to make.ready to serve.

Add ground barley and ground flax. Fold in old fashioned oats and raisins. Drop by rounded tablespoon onto cookie sheets. This cookie recipe has room for a lot of variations and I didn't shy away. I wanted to bake these as multigrain cookies by using a variety of grain flours.
